Distilled on our 80 gallon Christian Carl pot still, our contemporary style gin incorporates bright citrus flavors with classic juniper/floral notes, creating a clear and barrel aged gin.

Dirty Simon Martini
Ingredients
1.5 ounces Starlight Distillery Simon’s 1794 Barrel Finished Gin
3/4 ounces dry vermouth
1/2 ounce olive brine
2 dashes lemon bitters
(Optional) if no lemon bitters, stir with fresh lemon peel
Instructions
Add all ingredients to a mixing glass and top with ice three quarters of the way to the top. Stir for 10-15 seconds or until the ice feels loose. Strain into a chilled coupe or martini glass and garnish with an olive of your choice.
